What is a Sillbord or Sillunch?
A sillbord (literally “herring table”) is a traditional Swedish buffet centered around pickled herring, served with classic sides like boiled potatoes, sour cream, crispbread, eggs, cheese, and more.
It’s a staple of Swedish holidays like Midsummer and Christmas, and a Sillunch is a casual way to enjoy this flavorful tradition—a lighter, herring-focused take on the smörgåsbord.
